Founded in 1946 in the shadow of the Bab Doukkala mosque, La Maison Arabe's Le Restaurant and Les Trois Saveurs occupy adjoining courtyard salons where Andalusian musicians play beside an open fire while chefs plate lamb tanjia and pastilla. Hemingway and Jackie Kennedy once dined here, and the riad's on-site cooking school still teaches the recipes served at the table.
